Watermelon, Cucumber & Feta Salad Recipe

This recipe is perfect for summer and festive entertaining. The combination of sweet watermelon and the freshness of the cucumber beautifully complements the creaminess of the feta. This recipe can be made in advance — just don’t place the dressing on the salad until serving to prevent it going soggy.

This feta and watermelon salad recipe is perfect for summer and festive entertaining, and can be made in advance for a simple side dish.

Ingredients

  • 1 watermelon, peeled, deseeded & diced
  • 2 cucumbers, peeled & diced
  • ½ cup fresh herbs (mint & basil)
  • 1 cup Greek feta, crumbled
  • Honey & Lime Dressing
  • 1 tbsp honey
  • Juice 1 lime
  • 2 tbsp extra-virgin olive oil
  • Salt & pepper, to season

Method


  • In a large bowl combine the watermelon, cucumber and fresh herbs and toss to combine.
  • To make the dressing, whisk the honey, lime juice and olive oil together in a small bowl. Season to taste.
  • Top the watermelon salad with the dressing, sprinkle with feta cheese and serve.
