Hummus, Baby Spinach, Chargrilled Capsicum & Haloumi

Ingredients

  • 60g haloumi, cut into slices
  • 1 tbs olive oil (for cooking the haloumi)
  • 1-2 tbsp hummus
  • 3 CORN THINS slices
  • Small handful baby spinach leaves
  • Chargrilled capsicum
  • (store-bought or make your own) Dukkha (optional)

Method


  • Cook the haloumi in a frying pan with olive oil. Cook on each side until lightly brown. This should take only a few mins on a medium heat. Once cooked, place on a paper towel to cool and remove excess oil from cooking.
  • Spread a generous amount of hummus across each CORN THINS slice, then layer on some baby spinach leaves. Place the haloumi on top of the baby spinach, then finish with your desired amount of grilled capsicum. Sprinkle with seasoning or dukkha if desired.
