These delightful moist fruity muffins make a wholesome breakfast option or nourishing afternoon snack. Leave the skin on your pears for extra fibre and nutritional goodness.

Ingredients
- 2 cups almond meal
- 2 tsp baking powder
- Pinch sea salt
- 1 tsp ground cinnamon
- ⅓ cup coconut sugar
- ¼ cup milk of choice
- ¼ cup olive oil
- 3 organic eggs
- 1 tsp vanilla essence
- 2 medium pears, cubed
- ⅓ cup walnuts, roughly chopped
Method
- Preheat oven to 180°C and place muffin cups into a muffin tin.
- Combine almond meal, baking powder, sea salt, cinnamon and sugar together in a medium bowl.
- In a separate bowl whisk milk, olive oil, eggs and vanilla essence until well combined.
- Pour wet ingredients into dry and gently combine.
- Gently fold through the pear. Top each muffin with walnuts.
- Divide mixture into muffin cups and bake for 25 mins until golden.
