In the world of culinary artistry, sometimes it’s the simplest of dishes that leave the most indelible mark on our taste buds. Enter shirazi salad, a vibrant and refreshing creation that encapsulates the essence of Persian cuisine. With its harmonious blend of fresh ingredients, this salad is a celebration of flavours, textures and the art of simplicity.

Ingredients

  • 2 cups cucumber, finely diced
  • 2 cups tomatoes, finely diced
  • ½ cup red onion, finely chopped
  • ½ cup fresh parsley, finely chopped
  • ¼ cup fresh mint, finely chopped
  • Juice 1-2 lemons, to taste
  • 2 tbsp extra-virgin olive oil
  • Salt & black pepper, to taste
  • ¼ tsp dried mint (optional, for extra flavour)

Method


  • Wash and dry the cucumbers, tomatoes, red onion, parsley and mint and pat dry.
  • In a large mixing bowl, combine the diced cucumbers, diced tomatoes, chopped red onion, chopped parsley and chopped mint.
  • Drizzle the freshly squeezed lemon juice and extra-virgin olive oil.
  • Season with salt and freshly ground black pepper.
  • Gently toss all the ingredients together until well combined and the flavours are evenly distributed.
  • If using, sprinkle a small amount of dried mint over the salad.
  • Transfer to a serving bowl or individual plates.
  • Garnish with a sprig of fresh mint or parsley.
  • Serve as a side dish or light appetiser.
