Turkey & Cranberry Quesadillas

If you’re looking for a quick and easy way to use up the Christmas turkey, these quesadillas are it. The whole family will love them.

Ingredients

  • Leftover turkey, shredded or sliced
  • Leftover cranberry sauce
  • Tortilla wraps
  • Leftover cheese such as brie, camembert or sharp cheddar
  • Fresh coriander, chopped (optional)
  • Sour cream (optional)
  • Salsa or hot sauce (optional)Preheat a large pan or skillet over medium heat.

Method


  • Preheat a large pan or skillet over medium heat.
  • Lay a flour tortilla flat on a clean surface or cutting board.
  • Spread a layer of cranberry sauce on 1 half of the tortilla.
  • Add a layer of leftover turkey on top of the cranberry sauce.
  • Sprinkle a generous amount of shredded cheese over the turkey.
  • Fold the wrap in half to cover the filling.
  • Place the quesadilla in the preheated pan and cook for 2-3 mins on each side or until the tortilla is golden brown and the cheese is melted.
  • Repeat the process with the remaining tortillas and filling.
  • Once cooked, remove the quesadillas from the pan and let them cool for 1 min before slicing into wedges.
  • Serve with a sprinkle of fresh coriander on top and optional sides of sour cream and salsa or hot sauce.
  • Tip: You can also add other leftover ingredients like stuffing or mashed potatoes for extra flavour and texture.
